Borago’s Silver Celebration 25 Years of Food, Borago’s Silver Celebration
25 Years of Food, Family, and Flavor
By Jack Kirkendall
Photography by Hunter Burgtorf

While trends come and go along Florida’s Scenic Highway 30-A, Trattoria Borago has spent an impressive number of years doing one thing exceptionally well: feeding people like family. Some restaurants become local favorites thanks to their design, menu, or vibe; Borago is a rare blend of all three. Tucked into the heart of Grayton Beach, this culinary hot spot is marking its twenty-fifth anniversary of offering guests consistently good cuisine and growing deep roots running through the local community and beyond.

Since its opening in March 2000, Borago has been ideal for enjoying date nights, family gatherings, and apéritifs. The soft glow of the lights and the buzz of patrons at the bar create an unassuming charm complemented by the true mastery happening in the kitchen. With a menu including specialty cocktails, appetizers, pasta, and entrées (plus an ever-iconic off-menu item regulars swear by), there’s a reason diners return time after time. With favorites like three-meat bolognese with cheese tortelloni, wild mushroom ravioli, veal meatballs, fresh grouper Niçoise, and pan-seared scallops, every dish feels like it was made for a Sunday table—wholesome, satisfying, and shared with love.

The restaurant itself can’t receive all the praise, though. The institution’s heart comes from its founders: current chef/owner Michael Dragon and the late Chef Mark Anton. The VIE team had the privilege of dining there recently and chatting with Chef Dragon about the establishment’s past, present, and future. He credits a lot of the success to Borago’s incredible staff and their innate ability to treat patrons like family. While his vision for the future of Borago is ever-evolving, he noticeably kept Chef Anton front-of-mind with every word. The plaque honoring the late co-owner stands glimmering and proud just beside the restaurant’s front entrance.

Influences from the Tuscan farmland and Sicilian seaside join forces in another beachside haven, the area known as Scenic Highway 30-A or simply “30A” along Florida’s Gulf Coast. Lola Coastal Italian resides there in the bustling town center of Seacrest Beach, attracting locals and visitors alike with its signature pizza, fresh seafood, select-cut steaks, and delectable pasta. The brainchild of Chef Tom Catherall, one of the world’s few certified master chefs, Lola has become a 30-A staple since its inception in 2020. Now celebrating the five-year milestone of this casual-yet-refined restaurant, Chef Catherall, co-owner David Richard, Sr., and their team are thrilled to announce an overhaul of the space, menu, and wine list at Lola.

“We’ve loved serving the community these past five years,” says Chef Tom Catherall. “Now we want to make some changes and improvements to elevate the experience for our regulars and draw in new customers to see what Lola is all about—the finest local and sustainably sourced ingredients, great wine, and authentic Italian ambience.”

The menu updates include a new array of top-quality steaks alongside all-time favorites such as Lola’s pizzas, pappardelle pasta, jumbo lump crab cakes, and Chef’s famous garlic bread. Meanwhile, an upscale interior makeover brings new life to the dining room, boasting a partially open kitchen where guests can get a taste of the action, a bar boasting high-end wines, beer, specialty cocktails, and a relaxed yet refined atmosphere. New seating and tables were added in March, and guests can enjoy alfresco dining on the terrace as they watch the sunset and passersby.

The store is absolutely gorgeous. Every detail is so thoughtfully curated, and it truly feels like a little slice of coastal paradise. Live music, the mobile bar, and perfectly curated charcuterie boards from @ambrosia30a made it such a perfect evening.

Huge congratulations to the amazing Melissa Skowland for bringing this beautiful vision to life. It’s more than just a store, it’s an experience, and we can’t wait to come back again (and again). If you’re in the area, make sure to stop by and check it out! 🩵 Nice job as always @proffittpr and @waltonareachamber Photos: @hunterburgphoto

Surf & Sand Resort Gets a Luxe Makeover

Few places capture the sweetness of summer quite like Laguna Beach. It embodies a slower pace of life, where you can enjoy barefoot walks and leisurely afternoons sipping coffee while children indulge in ice cream bars, their beach hair drying in the sun. The scene is completed by surfboards and dogs joyfully running along the shore.

Laguna Beach feels like a time capsule, exuding the charm of small-town living. Only a 90-minute drive from Los Angeles, it serves as the perfect weekend retreat or makes for a delightful stop on a romantic drive down the coast toward San Diego.

Surf & Sand Resort Laguna Beach is a historic getaway for Hollywood stars and filmmakers. Since it opened in 1948, the resort has welcomed many notable personalities. During the 1970s, when President Richard Nixon visited his home in San Clemente, the White House Press Corps stayed at Surf & Sand. Reporters conducted interviews with the President on what is now known as the Bella Vista Terrace, just steps away from the beach.

Seventy-five years later, the resort has undergone an extensive renovation to enhance the guest experience in line with modern luxury. Upon arrival, guests are instantly greeted by the shimmering surface of the Pacific Ocean visible through the lobby, which features an inviting seating area and a spacious balcony. Just a few moments later, I find myself several stories up, delighted by the breathtaking view of the waves seen through the floor-to-ceiling glass doors that lead to a private balcony. A minimalist color palette beautifully complements the view, creating an inviting extension of the outdoors.
