Petite pause: Simmer Down at The Quoin Hotel

“The pub, like pubs all over the world, was a place for debate and discussion, for the exchange of views and opinions, for argument and for the working out of problems.”

―Alex La Guma, A Walk in the Night and Other Stories

Quoin, pronounced “coin,” is a new twenty-four-room luxury hotel in Wilmington, Delaware, with a nature-filled identity, a Victorian-era influenced palette, and three distinct food and beverage concepts operated by Method Co. Its recently opened craft cocktail lounge, Simmer Down, emphasizes a low-and-slow atmosphere, featuring the space’s original brick ceiling and a custom, room-spanning painted mural by the Reverend Michael Alan. The hotel derives its name from the Old French word meaning “corner” or “angle”—connecting the building’s history as a banking house and its corner-lot architecture through a single thread.
