After over two decades of representing some of the most important boutique and blue-chip luxury brands in areas like jewelry, fine dining, haute couture, real estate, and interior design, Altima PR’s CEO, Maribel Alvarez, decided to roll her experience into launching a start-up.

Taking her passion for caviar, Alvarez formed a brand curating the most coveted caviar brand in the world while ensuring sustainable practices and personalized service. Altima Caviar was launched in Palm Beach, Florida, in the summer of 2022 and has become one of the most recognized blue tins among the island’s cognoscenti. It is served at popular restaurants like La Goulue in New York and BiCE in Palm Beach, and sold at Mary Mahoney on Worth Avenue and everyone’s favorite Palm Beach seafood market, Cod and Capers. “Everyone knows Altima Caviar,” says interior designer Scott Snyder. “It’s delicious, and I love their concierge service. I practically DoorDash it to my office.”

Beyond the brand’s concierge service at home, Altima Caviar is an all-women-run business known for traveling the world to source caviar. “By meeting with farms—whether in France or Israel—we build relationships and vet our suppliers,” says Alvarez. To date, Altima Caviar is sold nationwide, including at Donna Mare in Miami, Fiora’s Bottle Shop in Houston, Rarecat Wineries in Napa, and La Goulue in New York.

What makes Altima Caviar different?

Not all aqua farms are created equal. Each farm has distinct practices that produce vastly different products. We visit and maintain relationships with our suppliers’ aqua farms to verify that they meet our high standards for quality, consistency, and sustainability.

How does Altima Caviar simplify the process of purchasing caviar?

We value quality over quantity. We are not about offering a million choices but the best choices. We educate our customers on the different tasting notes between the various caviars.

Tell us about your caviar collections.

Our current collection includes two Oscietras, a Beluga Hybrid, and a Siberian. The Oscietras are mild and buttery, whereas the Beluga Hybrid has more of a rich flavor profile, as does the Siberian, further characterized by a long finish. One of our favorite offerings is the Caviar Bump

Set, which provides customers the opportunity to explore the subtle differences between each variety. Plus, it’s a lot of fun.

It’s a direct line to a caviar liaison. When it comes to customer service, Altima has no desire to automate. We are dedicated to a personalized experience for each consumer, client, and partner.
