The South Walton sister restaurants are featured in the MICHELIN Guide 2026.
South Walton’s culinary landscape continues to earn national acclaim as two local restaurants, Roux 30A and The Daytrader Tiki Bar & Restaurant, have been selected as MICHELIN Recommended restaurants in the MICHELIN Guide 2026.
Led by chef and owner Nikhil Abuvala, the sister concepts represent two distinctly different dining experiences along Scenic Highway 30A, yet both share a commitment to exceptional hospitality, thoughtful cuisine, and memorable guest experiences.

Located in Grayton Beach, Roux 30A has become one of Northwest Florida’s most sought-after dining destinations. The intimate chef’s table concept centers around a weekly changing tasting menu inspired by seasonal ingredients and presented in an open-kitchen setting where guests can watch each course come to life. Known for its immersive communal dining experience, Roux 30A has built a loyal following through its focus on technical precision, creativity, and genuine hospitality.

Abuvala, a James Beard Award semifinalist, has long been recognized for his dedication to elevating the region’s culinary reputation, and the MICHELIN Guide distinction marks another milestone for the restaurant’s continued success.
Just a few miles away in Seaside, The Daytrader Tiki Bar & Restaurant offers a completely different yet equally compelling experience. Situated at the entrance to Seaside’s iconic Coleman Beach Pavilion, the vibrant restaurant has quickly become a favorite among locals and visitors since opening in 2023.
Inspired by Polynesian and Hawaiian influences, Daytrader combines Gulf Coast seafood with bold tropical flavors, handcrafted cocktails, and an atmosphere designed to transport guests beyond the ordinary. From shareable small plates and fresh seafood entrées to inventive seasonal cocktails, the restaurant embraces a spirit of escapism while remaining deeply rooted in South Walton’s hospitality culture.
The Daytrader’s beverage program was originally developed by renowned tiki expert Gregory “Bootleg Greg” Genias and continues to evolve under the leadership of Bar Manager Rhianda Smith, who collaborates closely with Abuvala on seasonal offerings and limited-time cocktail creations.
